Blueberry Rhubarb Pie
Blueberries and rhubarb are both considered ‘superfoods’ due to their high nutritional value and health benefits.

Preheat the oven to 375°F (190°C).

Roll out one pie crust and place it in a 9-inch pie dish.

In a large bowl, combine the blueberries, rhubarb, sugar, cornstarch, lemon juice, cinnamon, and salt. Mix well.

Pour the filling into the pie crust.

Dot the top of the filling with small pieces of unsalted butter.

Roll out the second pie crust and place it on top of the filling. Seal the edges and cut slits in the top crust to allow steam to escape.

Bake for 45-50 minutes, or until the crust is golden brown and the filling is bubbling.

Remove from the oven and let the pie cool for at least 1 hour before serving.

Serve the blueberry rhubarb pie with whipped cream or vanilla ice cream, if desired.
