  1. Preheat the oven to 400°F (200°C) and line a baking sheet with parchment paper.
  2. In a large bowl, whisk together the flour, sugar, baking powder, and salt.
  3. Cut the cold butter into small cubes and add it to the flour mixture. Use a pastry cutter or your fingers to cut the butter into the flour until the mixture resembles coarse crumbs.
  4. Stir in the shredded cheddar cheese and diced apple.
  5. In a separate bowl, whisk together the egg, heavy cream, and vanilla extract.
  6. Pour the wet ingredients into the dry ingredients and gently mix until just combined.
  7. Turn the dough out onto a lightly floured surface and knead it a few times until it comes together.
  8. Pat the dough into a circle about 1 inch thick. Use a sharp knife to cut the circle into 8 wedges.
  9. Transfer the scones to the prepared baking sheet and brush the tops with a little heavy cream.
  10. Bake for 18-20 minutes, or until the scones are golden brown.
