Blueberry Pancakes
Blueberries are often called a superfood due to their high antioxidant content.

In a large bowl, whisk together the flour, baking powder, salt, and sugar.

In a separate bowl, beat the egg and then add the milk and vegetable oil. Mix well.

Pour the wet ingredients into the dry ingredients and stir until just combined. Do not overmix.

Gently fold in the blueberries.

Heat a non-stick skillet or griddle over medium heat. Add a small amount of butter or oil.

Pour 1/4 cup of batter onto the skillet for each pancake. Cook until bubbles form on the surface, then flip and cook until golden brown.
