Coffee cake does not actually contain coffee, but it is often enjoyed with a cup of coffee.

  1. Preheat the oven to 350°F (175°C). Grease and flour a 9-inch round cake pan.
  2. In a large bowl, combine the flour, granulated sugar, baking powder, and salt. Cut in the butter until the mixture resembles coarse crumbs.
  3. In a separate bowl, beat together the eggs, milk, and vanilla extract. Stir into the flour mixture until just blended.
  4. Spread half of the batter into the prepared pan. Sprinkle with half of the blueberries.
  5. In a small bowl, combine the brown sugar and cinnamon. Sprinkle half of this mixture over the blueberries.
  6. Repeat layers with the remaining batter, blueberries, and brown sugar mixture.
  7. Bake for 40 to 45 minutes, or until a toothpick inserted into the center comes out clean.
  8. Allow the cake to cool in the pan for 10 minutes, then remove from the pan and cool completely on a wire rack.
  9. Serve and enjoy!
