  1. Preheat the oven to 325°F (163°C).
  2. In a bowl, combine the graham cracker crumbs and melted butter. Press the mixture into the bottom of a 9-inch (23 cm) springform pan.
  3. In a large mixing bowl, beat the cream cheese, sugar, and vanilla extract until smooth. Add the eggs, one at a time, beating well after each addition. Stir in the sour cream.
  4. Pour the cream cheese mixture over the crust in the springform pan. Smooth the top with a spatula.
  5. Bake for 60 minutes or until the center is set and the top is lightly browned. Remove from the oven and let it cool in the pan for 10 minutes.
  6. Run a knife around the edge of the pan to loosen the cheesecake. Remove the sides of the springform pan and let the cheesecake cool completely.
  7. In a small bowl, mix the mixed berries and powdered sugar. Spoon the berry mixture over the top of the cheesecake.
  8. Refrigerate for at least 2 hours or until chilled. Serve and enjoy!
