Preheat the oven to 350°F (175°C). Grease a 9x9-inch baking dish.

In a large bowl, mash the ripe bananas.

In a separate bowl, cream together the unsalted butter and granulated sugar. Add the egg and vanilla extract, and mix well.

In another bowl, whisk together the all-purpose flour, baking powder, and salt.

Gradually add the dry ingredients to the wet ingredients, mixing until just combined.

Pour half of the batter into the prepared baking dish. Spread a layer of Biscoff spread on top. Pour the remaining batter over the Biscoff spread.

Bake for 25-30 minutes, or until a toothpick inserted into the center comes out clean.

Allow the bars to cool in the baking dish for 10 minutes, then transfer to a wire rack to cool completely.

Cut into bars and serve.
