  1. Preheat the oven to 350°F (175°C). Grease a 9x9-inch baking dish.
  2. In a large bowl, mash the ripe bananas.
  3. In a separate bowl, cream together the unsalted butter and granulated sugar. Add the egg and vanilla extract, and mix well.
  4. In another bowl, whisk together the all-purpose flour, baking powder, and salt.
  5. Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
  6. Pour half of the batter into the prepared baking dish. Spread a layer of Biscoff spread on top. Pour the remaining batter over the Biscoff spread.
  7. Bake for 25-30 minutes, or until a toothpick inserted into the center comes out clean.
  8. Allow the bars to cool in the baking dish for 10 minutes, then transfer to a wire rack to cool completely.
  9. Cut into bars and serve.
