Preheat the oven to 350°F (175°C). Grease a loaf pan or muffin tin.

In a large bowl, mash the ripe bananas with a fork.

In a separate bowl, cream together the softened unsalted butter and granulated sugar.

Add the eggs and vanilla extract to the butter mixture and mix well.

In another bowl, whisk together the all-purpose flour, baking powder, baking soda, salt, cinnamon, and nutmeg.

Gradually add the dry ingredients to the wet ingredients, mixing until just combined.

Fold in the chopped walnuts.

Pour the batter into the prepared loaf pan or muffin tin.

Bake for 50-60 minutes for a loaf or 20-25 minutes for muffins, or until a toothpick inserted into the center comes out clean.

Remove from the oven and let cool in the pan for 10 minutes. Then transfer to a wire rack to cool completely.
