  2. Roll out the shortcrust pastry and line a quiche dish with it.
  3. Peel and grate the beetroot.

  5. In a bowl, whisk together eggs, milk, salt, and black pepper.
  6. Spread the sautéed beetroot mixture over the pastry base.
  7. Crumble feta cheese over the beetroot mixture.
  8. Pour the egg mixture over the beetroot and feta.
  9. Bake in the preheated oven for 40 minutes or until the quiche is set and golden.
