  1. Melt butter in a large pot over medium heat. Add chopped onion and minced garlic, sauté until softened.
  2. Sprinkle flour over the cooked onions and garlic. Stir well to combine and cook for 2 minutes.
  3. Slowly pour in the beer while stirring constantly. Allow the mixture to simmer for 5 minutes.
  4. Add the chicken or vegetable broth and bring to a boil. Reduce heat and simmer for 15 minutes.
  5. Remove from heat and use an immersion blender to blend the soup until smooth.
  6. Return the pot to low heat. Add grated Gouda cheese and stir until melted.
  7. Stir in the heavy cream, salt, and black pepper. Simmer for an additional 5 minutes.
