In a large pot, heat olive oil over medium heat. Add chopped onion, minced garlic, sliced carrots, and celery stalks. Sauté for 5 minutes.

Add thyme, bay leaf, salt, and black pepper. Stir well.

Add French lentils and vegetable stock. Bring to a boil, then reduce heat and simmer for 30 minutes, or until lentils are tender.

Meanwhile, preheat the oven to 350°F (175°C). Place kale leaves on a baking sheet, drizzle with olive oil, and season with salt and pepper. Bake for 10-15 minutes, until crispy.

Once the lentils are cooked, remove the bay leaf and thyme sprigs. Use an immersion blender to partially blend the soup, leaving some lentils whole for texture.
