In a mixing bowl, combine cottage cheese, cream cheese, 1 egg, sugar, and vanilla extract. Mix well until smooth.

In a separate bowl, whisk together flour, milk, and 1 egg until the batter is smooth.

Heat a non-stick skillet over medium heat and melt 1 tablespoon of butter.

Pour 1/4 cup of the batter onto the skillet and swirl it around to form a thin pancake.

Cook for about 1-2 minutes until the edges are golden brown. Flip the pancake and cook for another 1-2 minutes.

Remove the pancake from the skillet and repeat the process with the remaining batter.

Spoon 2 tablespoons of the cheese filling onto each pancake and fold the sides over to form a blintz.

Return the blintzes to the skillet and cook for 1-2 minutes on each side until golden brown.

Serve hot, dusted with powdered sugar.
