In a food processor, combine the flour and sugar. Add the butter and pulse until the mixture resembles coarse crumbs.

In a small bowl, whisk together the egg yolks and cold water. Add the egg mixture to the food processor and pulse until the dough comes together.

Shape the dough into a disk, wrap in plastic wrap, and refrigerate for 30 minutes.

Preheat the oven to 375°F (190°C).

Roll out the dough on a lightly floured surface and transfer it to a tart pan. Trim any excess dough.
