Barbecued Chilli and Cheese Mushrooms
Mushrooms are a great source of umami flavor, and grilling them brings out their natural smoky taste.

Preheat the grill to medium heat.

Clean the mushrooms and remove the stems.

In a small bowl, mix olive oil, garlic powder, paprika, salt, and black pepper.

Brush the mushroom caps with the oil mixture.

Slice the chili pepper into thin rings.

Stuff each mushroom cap with a slice of chili pepper and sprinkle shredded cheddar cheese on top.

Place the stuffed mushrooms on the grill and cook for about 8-10 minutes or until the cheese is melted and mushrooms are tender.

Remove from the grill and let them rest for 5 minutes.

Garnish with fresh parsley before serving.
