Bananas Foster Muffins
Bananas Foster is a classic New Orleans dessert that was created in the 1950s. It is traditionally made by sautéing bananas in butter, brown sugar, and rum, then serving them over vanilla ice cream.

Preheat the oven to 375°F (190°C). Grease a muffin tin or line it with paper liners.

In a large bowl, whisk together the flour, baking powder, salt, and cinnamon.

In a separate bowl, mix together the mashed bananas, melted butter, granulated sugar, brown sugar, egg, vanilla extract, and milk.

Pour the wet ingredients into the dry ingredients and stir until just combined. Fold in the chopped pecans.

Divide the batter evenly among the muffin cups.

In a small saucepan, melt the butter for the topping over medium heat. Stir in the brown sugar and rum until smooth.

Spoon the topping over each muffin.

Bake for 20-25 minutes, or until a toothpick inserted into the center comes out clean.
