Preheat the oven to 350°F (175°C) and line a cupcake pan with liners.

In a medium bowl, whisk together the flour, baking powder, and salt.

In a separate large bowl, cream together the butter and sugar until light and fluffy.

Beat in the egg, mashed bananas, and vanilla extract.

Gradually add the dry ingredients to the wet ingredients, alternating with the milk, beginning and ending with the dry ingredients. Mix until just combined.

Divide the batter evenly among the cupcake liners, filling each about 2/3 full.

Bake for 18-20 minutes, or until a toothpick inserted into the center comes out clean.

Remove from the oven and let the cupcakes cool in the pan for 5 minutes, then transfer them to a wire rack to cool completely.

Prepare the vanilla pudding according to package instructions and let it cool.

Once the cupcakes and pudding are completely cooled, use a knife or cupcake corer to remove the center of each cupcake.

Fill each cupcake with a spoonful of vanilla pudding.

Top each cupcake with a dollop of whipped cream.
