  1. Preheat the oven to 350°F (175°C). Grease a loaf pan.
  2. In a medium bowl, mash the ripe bananas.
  3. In a separate bowl, combine the rolled oats, all-purpose flour, baking powder, baking soda, salt, cinnamon, and nutmeg.
  4. In a large bowl, cream together the unsalted butter and brown sugar. Beat in the eggs one at a time, then stir in the vanilla extract.
  5. Gradually mix in the dry ingredients, alternating with the milk.
  6. Fold in the mashed bananas and chopped walnuts.
  7. Pour the batter into the prepared loaf pan and smooth the top.
  8. Bake for 50-60 minutes, or until a toothpick inserted into the center comes out clean.
  9. Remove from the oven and let it cool in the pan for 15 minutes. Transfer to a wire rack to cool completely.
