  1. Preheat oven to 350°F (175°C). Grease bottom only of 9x5-inch loaf pan.
  2. In a large bowl, mash the bananas. Stir in sugar, oil, and eggs until well blended. Stir in flour, baking soda, salt, and nuts (if desired) just until moistened. Pour into the prepared loaf pan.
  3. Bake for 60 to 70 minutes or until a toothpick inserted in the center comes out clean. Cool in the pan for 10 minutes, then remove from the pan and cool completely on a wire rack.
  4. Slice and serve.
