  1. Preheat the oven to 400°F (200°C).
  2. Wash and dry the potatoes, then pierce them with a fork.
  3. Place the potatoes on a baking sheet and bake for 45-60 minutes, or until tender.
  4. While the potatoes are baking, chop the onion and garlic.
  5. In a large pot, melt the butter over medium heat.
  6. Add the onion and garlic and cook until softened.
  7. Once the potatoes are done, remove them from the oven and let them cool slightly.
  8. Cut the potatoes in half lengthwise and scoop out the flesh into a bowl.
  9. Mash the potatoes with a fork or potato masher until smooth.

  11. Stir in the vegetable broth, milk, salt, and black pepper.
  12. Bring the soup to a simmer and cook for 15-20 minutes.
  13. While the soup is simmering, cook the bacon until crispy.
  14. Crumble the bacon and set aside.
  15. Once the soup is done simmering, remove it from the heat.
  16. Stir in the cheddar cheese until melted.
  17. Serve the soup hot, topped with crumbled bacon, sour cream, and chopped green onions.
