Preheat the oven to 350°F (175°C).

In a large bowl, whisk together the eggs, milk, salt, and black pepper.

Chop the bell pepper, onion, and spinach into small pieces.

Add the chopped vegetables and cheddar cheese to the egg mixture and stir well.

Grease a baking dish and pour the egg mixture into it.

Bake in the preheated oven for 25-30 minutes or until the omelet is set.

Remove from the oven and let it rest for 5 minutes.
