Peel and core the apples, then cut them into quarters.

Roll out the puff pastry and cut it into 6 equal squares.

Place an apple quarter in the center of each square.

In a small bowl, mix together the brown sugar, cinnamon, and vanilla extract.

Sprinkle the sugar mixture over the apples.

Dot each apple with a small piece of butter.

Fold the corners of the puff pastry squares over the apples, pinching the edges to seal.
