Baby Blondie Bites
Blondies are often referred to as the blonde version of brownies, as they have a similar texture but are made without cocoa or chocolate.

Preheat the oven to 350°F (175°C). Grease a mini muffin tin.

In a microwave-safe bowl, melt the butter. Add the brown sugar and stir until well combined.

Add the egg and vanilla extract to the butter mixture and mix well.

In a separate bowl, whisk together the all-purpose flour, baking powder, and salt. Gradually add the dry ingredients to the wet ingredients, mixing until just combined.

Fold in the white chocolate chips and chopped pecans.

Spoon the batter into the prepared mini muffin tin, filling each cup about 2/3 full.

Bake for 12-15 minutes, or until the edges are golden brown.

Remove from the oven and let cool in the tin for 5 minutes. Then transfer the blondie bites to a wire rack to cool completely.
