Preheat the oven to 350°F (175°C) and line a cupcake pan with liners.

In a medium bowl, whisk together the flour, baking powder, and salt.

In a separate large bowl, cream together the butter and sugar until light and fluffy.

Beat in the egg, mashed bananas, and vanilla extract.

Gradually add the dry ingredients to the wet ingredients, alternating with the milk. Mix until just combined.

Fill each cupcake liner about 2/3 full with the batter.

Bake for 18-20 minutes or until a toothpick inserted into the center comes out clean.

Remove cupcakes from the oven and let them cool in the pan for 5 minutes, then transfer to a wire rack to cool completely.

In a small bowl, prepare the vanilla pudding mix according to package instructions.

Once the cupcakes have cooled, use a knife or cupcake corer to create a small hole in the center of each cupcake.

Fill each hole with a spoonful of prepared vanilla pudding.

Top each cupcake with a dollop of whipped cream and garnish with banana slices.
