  1. Preheat the oven to 325°F (163°C).
  2. In a medium bowl, combine graham cracker crumbs and melted butter. Press the mixture into the bottom of a 9-inch (23 cm) springform pan to create the crust.
  3. In a large mixing bowl, beat cream cheese and sugar until smooth. Add sour cream, vanilla extract, eggs, flour, and lemon zest. Mix until well combined.
  4. Pour the cream cheese mixture over the crust in the springform pan. Smooth the top with a spatula.
  5. Bake for 40 minutes, or until the edges are set and the center is slightly jiggly.
  6. Turn off the oven and leave the cheesecake inside for 1 hour to rest.
  7. Remove the cheesecake from the oven and let it cool to room temperature.
  8. Refrigerate for at least 2 hours, or overnight, before serving.
  9. Garnish with fresh berries before serving. Enjoy!
