Roll out the dough on a floured surface to 1/4 inch thickness.

Cut out round shapes using a cookie cutter.

Place half of the cookies on a baking sheet lined with parchment paper.

Spoon a small amount of peach jam onto the center of each cookie.

Place another cookie on top of each filled cookie and press the edges together to seal.
