  1. Preheat the oven to 350°F (175°C).
  2. In a large bowl, cream together the butter and sugar until smooth.
  3. Beat in the egg yolks and vanilla extract.
  4. Gradually add the flour and mix until a dough forms.
  5. Roll out the dough on a floured surface to 1/4 inch thickness.
  6. Cut out round shapes using a cookie cutter.
  7. Place half of the cookies on a baking sheet lined with parchment paper.
  8. Spoon a small amount of peach jam onto the center of each cookie.
  9. Sprinkle with ground cinnamon.
  10. Place another cookie on top of each filled cookie and press the edges together to seal.
  11. Bake for 12-15 minutes or until lightly golden.
  12. Allow the cookies to cool for 5 minutes on the baking sheet, then transfer to a wire rack to cool completely.
  13. Dust with powdered sugar before serving.
