Asparagus Veloute

Trim and chop the asparagus into 1-inch pieces.

In a large pot, melt the butter over medium heat. Add the onion and garlic, and cook until softened.

Add the asparagus and potato to the pot, and cook for another 5 minutes.

Pour in the vegetable broth and bring to a boil. Reduce heat and simmer for 20 minutes, or until the vegetables are tender.

Use an immersion blender or transfer the soup to a blender, and blend until smooth.

Return the soup to the pot and stir in the heavy cream. Season with salt and black pepper.

Simmer for another 5 minutes, then remove from heat.

Let the soup rest for 5 minutes before serving.
