Asparagus Omelette Wraps

Trim the ends of the asparagus spears and blanch them in boiling water for 2 minutes. Drain and set aside.

In a bowl, beat the eggs and season with salt and black pepper.

Heat olive oil in a non-stick pan over medium heat.

Pour the beaten eggs into the pan and cook until the edges start to set.

Place the blanched asparagus spears on top of the omelette.

Sprinkle grated cheddar cheese over the asparagus.

Carefully fold the omelette in half and cook for another minute until the cheese melts.

Remove from heat and let it rest for a minute.

Cut the omelette into slices and serve as wraps.
