  1. Rinse the rice under cold water until the water runs clear.
  2. In a large pan, heat olive oil over medium heat. Add chopped onion and minced garlic. Cook until onion becomes translucent.
  3. Add rice to the pan and stir-fry for 2 minutes.
  4. Add vegetable broth, salt, and black pepper to the pan. Bring to a boil, then reduce heat to low and cover. Cook for 15-20 minutes until rice is tender and liquid is absorbed.
  5. While the rice is cooking, blanch the asparagus in boiling water for 2 minutes, then transfer to ice water to stop the cooking process. Cut the asparagus into bite-sized pieces.
  6. In a separate pan, toast the cashews over medium heat until golden brown.
  7. Once the rice is cooked, remove from heat and let it rest for 5 minutes.
  8. Fluff the rice with a fork and add the cooked asparagus, toasted cashews, lemon juice, and chopped parsley. Mix well.
