  4. Place the dough in a greased bowl, cover with a damp cloth, and let it rise in a warm place for 1 hour.
  5. Preheat the oven to 425°F (220°C) and bring a large pot of water to a boil.
  6. Divide the dough into 6 equal portions and shape each portion into a bagel shape.
  7. Boil the bagels in the pot of water for 1 minute on each side.
  8. Remove the bagels from the water and place them on a baking sheet lined with parchment paper.
  9. Brush the beaten egg over the bagels and sprinkle with additional grated Asiago cheese and chopped rosemary.
