Artichoke Chowder
Artichokes are actually a type of thistle and are considered one of the oldest cultivated vegetables in the world.

Drain and chop the artichoke hearts.

Peel and dice the potatoes.

Finely chop the onion and garlic.

In a large pot, melt the butter over medium heat.

Add the chopped onion and garlic. Sauté until translucent.

Stir in the flour and cook for 1-2 minutes.

Gradually whisk in the vegetable broth.

Add the chopped artichoke hearts, diced potatoes, dried thyme, bay leaf, salt, and black pepper.

Bring the mixture to a boil, then reduce the heat and simmer for 20 minutes or until the potatoes are tender.

Stir in the milk and heavy cream. Simmer for an additional 5 minutes.

Remove the bay leaf and discard.

Serve the chowder hot, garnished with chopped chives.
