Apricots are believed to have originated in China over 4,000 years ago and were introduced to Europe by the Romans.

  1. Preheat the oven to 350°F (175°C). Grease a 9x9-inch baking dish.
  2. In a medium bowl, combine the all-purpose flour, granulated sugar, salt, and baking powder. Cut in the unsalted butter until the mixture resembles coarse crumbs.
  3. In a separate bowl, beat the egg and vanilla extract together. Add the egg mixture to the flour mixture and mix until well combined.
  4. Press two-thirds of the dough into the bottom of the prepared baking dish. Spread the apricot filling evenly over the dough.
  5. Crumble the remaining dough over the apricot filling.
  6. Bake in the preheated oven for 25 minutes, or until the top is golden brown.
  7. Allow the apricot bars to cool completely in the baking dish before cutting into squares.
  8. Dust with powdered sugar before serving.
