  1. Preheat the oven to 350°F (175°C).
  2. Cut the bread into small cubes and spread them on a baking sheet. Toast in the oven for about 10 minutes, or until lightly browned and crispy.
  3. In a large bowl, combine the dried apricots, almonds, onion, and celery. Mix well.
  4. In a skillet, melt the butter over medium heat. Add the onion and celery mixture and cook until softened, about 5 minutes.
  5. In the large bowl, add the toasted bread cubes, cooked onion and celery mixture, chicken or vegetable broth, egg, salt, and pepper. Mix well.
  6. Transfer the mixture to a greased baking dish. Cover with foil and bake for 30 minutes.
  7. Remove the foil and bake for an additional 10-15 minutes, or until the top is golden brown.
  8. Let the stuffing rest for 10 minutes before serving.
