Apricot Almond Scones

Preheat the oven to 400°F (200°C). In a mixing bowl, combine the flour, sugar, baking powder, and salt.

Cut the cold butter into small cubes and add it to the dry ingredients. Use your fingers or a pastry cutter to cut the butter into the flour mixture until it resembles coarse crumbs.

Stir in the chopped dried apricots and sliced almonds.

In a separate bowl, whisk together the milk, vanilla extract, and egg. Pour the wet ingredients into the dry ingredients.

Gently mix until just combined. Be careful not to overmix.

Transfer the dough onto a lightly floured surface. Shape it into a 1-inch thick circle.

Cut the circle into 8 wedges and place them on a baking sheet lined with parchment paper.
