Preheat the oven to 375°F (190°C). In a large bowl, whisk together the flour, baking powder, cinnamon, and salt. In a separate bowl, mix together the melted butter, sugar, egg, vanilla extract, applesauce, and milk. Gradually add the wet ingredients to the dry ingredients, stirring until just combined. Fold in the chopped apple. Spoon the batter into a greased muffin tin, filling each cup about 2/3 full. Bake for 18-20 minutes, or until a toothpick inserted into the center of a muffin comes out clean. Allow the muffins to cool in the tin for 5 minutes, then transfer them to a wire rack to cool completely. Enjoy!
