Preheat the oven to 350°F (180°C). Grease a round cake pan.

Peel, core, and slice the apples into thin wedges.

In a large bowl, beat the eggs and sugar until pale and fluffy. Add the vanilla extract and mix well.

Sift in the flour, baking powder, and salt. Gently fold the dry ingredients into the egg mixture until just combined.

Pour half of the batter into the prepared pan. Arrange half of the apple slices on top. Repeat with the remaining batter and apple slices.

Bake for 40 minutes or until the top is golden brown and a toothpick inserted into the center comes out clean.

Allow the sharlotka to cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.
