Preheat the oven to 350°F (175°C).

In a large skillet, melt the butter over medium heat. Add the onion and celery, and cook until softened.

In a large mixing bowl, combine the bread cubes, cooked onion and celery, apples, dried cranberries, pecans, parsley, dried sage, salt, and black pepper. Mix well.

Gradually pour the vegetable broth over the bread mixture, stirring gently to moisten all the ingredients.

Transfer the stuffing mixture to a greased baking dish.

Cover the dish with foil and bake for 30 minutes.

Remove the foil and bake for an additional 10 minutes, or until the top is golden brown.

Let the stuffing rest for 10 minutes before serving. Enjoy!
