Cut the bread into cubes and spread them on a baking sheet. Bake for 10 minutes or until slightly toasted.

In a large skillet, melt the butter over medium heat. Add the onion and celery and cook until softened.

Add the apples, dried cranberries, pecans, parsley, sage, thyme, salt, and black pepper. Cook for 5 minutes, stirring occasionally.

In a large bowl, combine the toasted bread cubes and the apple-cranberry mixture. Mix well.
