Caramels were originally made in the 17th century by boiling sugar and water together until it caramelized.

  1. In a large saucepan, combine the apple cider, butter, and heavy cream. Bring to a boil over medium heat.
  2. Reduce heat to low and simmer for 1 hour, stirring occasionally.
  3. Add the granulated sugar, light corn syrup, and salt to the saucepan. Stir until the sugar has dissolved.
  4. Continue to simmer for another 30 minutes, stirring occasionally.
  5. Remove from heat and let cool for 5 minutes.
  6. Pour the caramel mixture into a greased baking dish and let it cool completely.
  7. Once cooled, cut the caramel into small squares.
  8. Wrap each caramel square in wax paper or parchment paper.
  9. Let the caramels rest at room temperature for 2 hours before serving.
