Apple Butter Muffins
Apple butter is a highly concentrated form of apple sauce, cooked slowly to create a rich, caramelized flavor.

Preheat the oven to 375°F (190°C). Grease a muffin tin or line with muffin liners.

In a large bowl, whisk together the flour, baking powder, cinnamon, and salt.

In another bowl, mix the melted butter and sugar until well combined. Add the egg and beat until smooth. Stir in the milk, apple butter, and vanilla extract.

Gradually add the wet ingredients to the dry ingredients, stirring until just combined.

Spoon the batter into the prepared muffin tin, filling each cup about 2/3 full.

Bake for 20-25 minutes, or until a toothpick inserted into the center comes out clean.

Remove from the oven and let the muffins cool in the tin for 5 minutes. Then transfer to a wire rack to cool completely.
