  1. Rinse and drain the barley.
  2. In a large saucepan, combine the barley and 2 cups of water. Bring to a boil, then reduce heat to low. Cover and simmer for 45 minutes, or until the barley is tender and the water has been absorbed.
  3. In a separate saucepan, combine the diced apples, milk, and sugar. Bring to a boil, then reduce heat to low. Simmer for 10 minutes, or until the apples are soft.
  4. Preheat the oven to 350°F (175°C).
  5. In a large bowl, combine the cooked barley, cooked apples, beaten egg, vanilla extract, cinnamon powder, melted butter, raisins, and chopped nuts. Mix well.
  6. Pour the mixture into a greased baking dish.
  7. Bake for 30 minutes, or until the pudding is set and the top is golden brown.
  8. Remove from the oven and let it rest for 30 minutes before serving.
  9. Serve warm or chilled.
