Apple Almond Muffins
Muffins originated in Europe and were traditionally made without sweeteners, instead relying on the natural sweetness of the fruit.

Preheat the oven to 375°F (190°C) and line a muffin tin with paper liners.

In a large bowl, whisk together the flour, baking powder, salt, cinnamon, and nutmeg.

In a separate bowl, beat the eggs and sugar until light and fluffy. Add the vegetable oil, vanilla extract, and milk, and mix well.

Gradually add the dry ingredients to the wet ingredients, mixing until just combined. Fold in the diced apples.

Divide the batter evenly among the muffin cups, filling each about 3/4 full. Sprinkle the sliced almonds on top.

Bake for 20-25 minutes, or until a toothpick inserted into the center comes out clean.

Allow the muffins to cool in the tin for 5 minutes, then transfer them to a wire rack to cool completely.
