  1. Preheat the oven to 325°F (163°C).
  2. In a medium bowl, combine graham cracker crumbs and melted butter. Press the mixture into the bottom of a 9-inch (23 cm) springform pan to form the crust.
  3. In a large mixing bowl, beat cream cheese and sugar until smooth. Add eggs one at a time, beating well after each addition. Stir in vanilla extract and almond extract.
  4. Peel and thinly slice the apples. In a separate bowl, toss the apple slices with cinnamon and lemon juice.
  5. Pour half of the cream cheese mixture over the crust. Arrange half of the apple slices on top. Sprinkle with half of the almonds. Repeat the layers with the remaining ingredients.
  6. Bake for 55-60 minutes, or until the center is set and the top is lightly browned.
  7. Remove from the oven and let it cool in the pan for 10 minutes. Then, remove the sides of the springform pan and let the cheesecake cool completely.
  8. Refrigerate for at least 2 hours, or overnight, before serving.
  9. Serve chilled with whipped cream on top.
