Anzac biscuits are a traditional Australian sweet treat that originated during World War I. They were sent by wives and women’s groups to soldiers serving abroad as they had a long shelf life and were able to withstand the long journey.

  1. Preheat the oven to 160°C (320°F) and line a baking sheet with parchment paper.
  2. In a large mixing bowl, combine the rolled oats, desiccated coconut, all-purpose flour, and granulated sugar.
  3. In a small saucepan, melt the unsalted butter and golden syrup over low heat.
  4. In a separate small bowl, dissolve the baking soda in boiling water, then add it to the melted butter mixture.
  5. Pour the melted butter mixture into the dry ingredients and mix until well combined.
  6. Take spoonfuls of the mixture and roll them into balls, then place them onto the prepared baking sheet.
  7. Flatten each ball slightly with the back of a fork.
  8. Bake in the preheated oven for 10-12 minutes, or until golden brown.
  9. Remove from the oven and let cool on the baking sheet for 5 minutes, then transfer to a wire rack to cool completely.
