Heat butter in a large skillet over medium heat. Add onions and garlic, and cook until onions are translucent.

Add mushrooms and cook until they release their liquid and start to brown.

Sprinkle flour over the mushrooms and stir to coat.

Slowly pour in the vegetable broth, stirring constantly, until the mixture thickens.

Reduce heat to low and stir in sour cream, Dijon mustard, parsley, salt, and black pepper.

Simmer for 5 minutes, stirring occasionally.
