  1. Preheat the oven to 325°F (163°C).
  2. In a medium bowl, combine the graham cracker crumbs and melted butter. Press the mixture into the bottom of a 9-inch (23 cm) springform pan to form the crust.
  3. In a large mixing bowl, beat the cream cheese, sugar, and vanilla extract until smooth and creamy.
  4. Add the eggs, one at a time, beating well after each addition.
  5. Mix in the sour cream and flour until well combined.
  6. Stir in the red food coloring until evenly distributed.
  7. Pour the batter over the crust in the springform pan.
  8. Bake for 55-60 minutes, or until the center is set and the top is slightly golden.
  9. Remove from the oven and let cool in the pan for 10 minutes.
  10. Run a knife around the edges of the pan to loosen the cheesecake, then remove the sides of the pan.
  11. Let the cheesecake cool completely, then refrigerate for at least 2 hours or overnight.
  12. Serve chilled with whipped cream and sliced fresh strawberries on top.
