Preheat the oven to 350°F (175°C). Line a baking sheet with parchment paper.

In a medium bowl, whisk together the flour, baking powder, and salt.

In a large bowl, cream together the butter and sugar until light and fluffy. Beat in the eggs, one at a time, followed by the vanilla extract and almond extract.

Gradually add the flour mixture to the butter mixture, mixing until just combined. Stir in the toasted and chopped almonds.

Divide the dough in half and shape each half into a log, approximately 12 inches long and 2 inches wide. Place the logs onto the prepared baking sheet, leaving space between them.

Bake for 25-30 minutes, or until the logs are lightly golden brown and firm to the touch. Remove from the oven and let cool for 10 minutes.

Reduce the oven temperature to 325°F (160°C). Using a serrated knife, carefully slice the logs into 1/2-inch thick slices. Place the slices back onto the baking sheet, cut side down.

Bake for an additional 10-15 minutes, or until the biscotti are golden brown and crisp. Remove from the oven and transfer to a wire rack to cool completely.
