  1. In a bowl, mix graham cracker crumbs and melted butter. Press onto the bottom of a greased 9-inch springform pan.
  2. In a large mixing bowl, beat cream cheese, granulated sugar, amaretto liqueur, and vanilla extract until smooth.
  3. In a separate bowl, whip the heavy cream and powdered sugar until soft peaks form.
  4. Dissolve gelatin powder in water and let it sit for 5 minutes. Microwave for 10 seconds to melt the gelatin.
  5. Fold the whipped cream and melted gelatin into the cream cheese mixture.
  6. Pour the mixture over the crust in the springform pan.
  7. Refrigerate for at least 2 hours, or until set.
  8. Once set, remove from the springform pan and garnish with toasted almonds and whipped cream.
  9. Serve chilled and enjoy!
