  2. In a mixing bowl, cream together the butter and sugar until light and fluffy.
  3. Add the egg yolk and vanilla extract, and mix well.
  4. In a separate bowl, whisk together the almond flour, all-purpose flour, and salt.
  5. Gradually add the dry ingredients to the butter mixture, mixing until well combined.
  6. Roll the dough into small balls and place them on a baking sheet lined with parchment paper.
  7. Use your thumb to make an indentation in the center of each cookie.
  8. Fill each indentation with a teaspoon of jam.
  9. Bake for 12-15 minutes, or until the edges of the cookies are golden brown.
  10. Remove from the oven and let the cookies cool on the baking sheet for 5 minutes.
