Almond Thumbprint Cookies
Thumbprint cookies are believed to have originated in Sweden and are traditionally filled with lingonberry jam.

Preheat the oven to 350°F (175°C).

In a mixing bowl, cream together the butter and sugar until light and fluffy.

Add the egg yolk and vanilla extract, and mix well.

In a separate bowl, whisk together the almond flour, all-purpose flour, and salt.

Gradually add the dry ingredients to the butter mixture, mixing until well combined.

Roll the dough into small balls and place them on a baking sheet lined with parchment paper.

Use your thumb to make an indentation in the center of each cookie.

Fill each indentation with a teaspoon of jam.

Bake for 12-15 minutes, or until the edges of the cookies are golden brown.

Remove from the oven and let the cookies cool on the baking sheet for 5 minutes.

Transfer to a wire rack to cool completely.
