  1. Preheat the oven to 400°F (200°C). Cut the acorn squash in half and remove the seeds. Slice the squash into 1-inch thick slices.
  2. Core the apples and slice them into thin wedges.
  3. In a large bowl, combine the acorn squash slices, apple wedges, olive oil, maple syrup, cinnamon, nutmeg, and salt. Toss until well coated.
  4. Spread the mixture onto a baking sheet and roast in the preheated oven for 30-40 minutes, or until the squash is tender and golden brown.
  5. In the last 5 minutes of cooking, sprinkle the pecans and dried cranberries over the squash and apples.
  6. Remove from the oven and garnish with fresh thyme. Let it rest for 10 minutes before serving.
