Preheat the oven to 375°F (190°C).

Slice the eggplant into 1/4-inch thick rounds.

Place the eggplant slices on a baking sheet and brush both sides with olive oil.

Bake the eggplant slices for 15 minutes, flipping halfway through.

In a small saucepan, heat the garlic and tomato sauce over medium heat.

Remove the eggplant slices from the oven and spread a spoonful of tomato sauce on each slice.

Top with mozzarella cheese and sprinkle with parmesan cheese.

Return the eggplant slices to the oven and bake for an additional 15-20 minutes, or until the cheese is melted and bubbly.

Remove from the oven and let rest for 10 minutes.
