In a mixing bowl, whisk together the flour, salt, and sugar.

In a separate bowl, whisk together the milk, eggs, and vanilla extract.

Slowly pour the milk mixture into the flour mixture, whisking constantly until smooth.

Heat a non-stick skillet over medium heat and melt the butter.

Pour 1/4 cup of batter into the skillet, swirling it around to coat the bottom.

Cook for 1-2 minutes until the edges start to lift, then flip and cook for another 1-2 minutes.

Repeat with the remaining batter.

Fill the crepes with your choice of filling and fold them in half or roll them up.
